    How to Make Mediterranean Keto Spinach-Feta Pockets

    1. Preheat Oven and Prepare Baking Sheet

    Preheat your oven to 350°F and line a rimmed baking sheet with parchment paper.

    2. Prepare Spinach Mixture

    Place the thawed spinach in a tea towel and squeeze out as much moisture as possible. Transfer to a large bowl. Add the crumbled feta cheese, egg, finely chopped onions, minced garlic, salt, and black pepper. Mix until well combined.

    3. Prepare Dough

    Lightly sprinkle some almond flour on your work surface and roll out the Magic Mozzarella Dough into a 16-inch square. Cut the dough into 16 equal squares.

    4. Fill and Shape Pies

    Place about one tablespoon of the spinach mixture in the center of each dough square. Fold each square into a triangle and pinch the edges together tightly to seal. Make a small slit in the top of each pocket to allow steam to escape.

    5. Bake Pockets

    Place the filled pockets on the prepared baking sheet. Bake in the preheated oven for 20 minutes, or until slightly golden brown.

    6. Cool and Serve

    Once baked, let the pockets cool for a few minutes before serving. Store any leftovers in the refrigerator for up to four days.
