    How to Make Parmesan Crusted Tuscan Meatloaf

    1. Preparation

    Preheat your oven to 190°C (170°C fan-assisted or gas mark 5). Prepare a 2lb loaf tin by lining the long sides and the base with a double thickness of baking parchment.

    2. Breadcrumb Topping

    Combine 2 tablespoons of the breadcrumbs with 2 tablespoons of grated Parmesan in a small bowl. Set this mixture aside for later use.

    3. Meatloaf Mixture

    In a large mixing bowl, add the remaining breadcrumbs, grated Parmesan, minced beef, chopped onion, pancetta, chopped garlic, beaten egg, and tomato purée. Season with a generous pinch of salt and black pepper. Thoroughly mix all the ingredients together using your hands for best results.

    4. Baking

    Firmly press the meatloaf mixture into the prepared loaf tin. Evenly sprinkle the top with the reserved breadcrumb and Parmesan mixture. Place in the preheated oven and bake for 40-45 minutes, or until the top is beautifully golden and crunchy. If the top does not achieve the desired color, briefly place the meatloaf under the grill for about 5 minutes to brown.

    5. Serving

    Allow the meatloaf to cool in the tin for 5 minutes. Then, using the baking parchment, carefully lift the meatloaf onto a cutting board. Slice and serve alongside jacket potatoes and green beans for a complete meal.
