1. Prepare Garlic Paste
Create a smooth garlic paste by combining minced garlic with a pinch of coarse kosher salt. Use a mortar and pestle or the flat side of a knife to mash the mixture into a paste.
2. Mix Lamb Meatball Ingredients
In a large bowl, mix half of the garlic paste with ground lamb, cumin seeds, hot sauce, black pepper, chile powder, minced scallion, and chopped parsley.
3. Shape and Broil Meatballs
