1. Wash and Drain Lentils
Start by washing and draining the lentils thoroughly. This helps remove any debris and prevents a cloudy broth.
2. Combine Ingredients and Boil
In a 4-quart heavy-bottomed pot, combine the washed lentils, 6 cups of water, a cinnamon stick, a bay leaf, garlic cloves, ginger slices, and ground turmeric. Bring this mixture to a boil. The boiling process will soften the lentils and allow them to absorb the aromatic flavors of the spices.
3. Simmer Lentils
Once it reaches a boil, cover the pot, lower the heat, and let it simmer for about 30 to 45 minutes. This slow cooking helps the lentils become tender and fully infused with the aromatic spices.
4. Add Lemon and Spices
Slice the lemon into quarters. After the lentils have simmered, add the lemon slices, salt, black pepper, and cayenne pepper (if using) to the pot. Stir everything well, cover the pot again, and let it simmer for an additional 5 minutes.
5. Prepare Hot Oil with Asafetida and Cumin Seeds
While the lentils are simmering with the lemon and spices, heat the vegetable oil or usli ghee in a small skillet until it’s very hot. Once the oil is hot, add a pinch of ground asafetida and the cumin seeds. The asafetida will sizzle, and the cumin seeds will darken, releasing their essential oils and enhancing the overall flavor of the dish.
6. Combine and Serve
Pour the hot oil with the asafetida and cumin seeds over the lentils. Stir well to combine all the flavors. Your Aromatic Spiced Lentil Delight is now ready to serve. Enjoy it with rice, bread, or your choice of meat, chicken, fish, or vegetables.
