How to Make Chickpea and Spinach Stew

1. Heat Olive Oil and Cook Onion

Start by heating the olive oil in a large pot over medium heat. Once the oil is shimmering, add the finely chopped onion and cook it until it becomes soft and translucent, which should take about 5 minutes.

2. Add Garlic

Next, add the minced garlic to the pot and stir it for about a minute, just until it becomes fragrant. Be careful not to let it burn.

3. Add Spices

Stir in the ground cumin, ground coriander, and smoked paprika. Cooking the spices in the oil for a minute or two will help to release their essential oils and deepen their flavors.

4. Add Tomatoes and Broth

Pour in the can of crushed tomatoes and the vegetable broth, then stir to combine. Let the mixture come to a gentle simmer.

5. Add Chickpeas

Add the drained and rinsed chickpeas to the pot. Stir well and allow the stew to simmer for about 15 minutes.

6. Add Spinach

Finally, add the chopped spinach to the pot. Stir the spinach into the stew until it is wilted and well combined. Season the stew with salt and pepper to taste.

7. Simmer and Serve

Allow the stew to simmer for an additional 5 minutes to ensure all the flavors are well integrated. Serve hot, and enjoy the hearty, comforting blend of chickpeas and spinach.
