How to Make Creamy Fava Bean Spread

1. Shell and Blanch Fava Beans

First, shell the fava beans to remove the outer pods. Once shelled, blanch the fava beans briefly in boiling water, then quickly transfer them to an ice water bath. Drain the beans and pop them out of their skins.

2. Cook the Fava Beans

Heat ½ cup of olive oil in a heavy-bottomed saucepan over medium heat. Add the skinned fava beans, sliced garlic, rosemary branch, and a generous pinch of salt. Pour in ½ cup of water. Cook this mixture gently until the fava beans are tender, about 15 minutes.

3. Mash the Mixture
