How to Make Creamy Fava Bean Spread

    1. Shell and Blanch Fava Beans

First, shell the fava beans to remove the outer pods. Once shelled, blanch the fava beans briefly in boiling water, then quickly transfer them to an ice water bath. Drain the beans and pop them out of their skins.

    2. Cook the Fava Beans

Heat ½ cup of olive oil in a heavy-bottomed saucepan over medium heat. Add the skinned fava beans, sliced garlic, rosemary branch, and a generous pinch of salt. Pour in ½ cup of water. Cook this mixture gently until the fava beans are tender, about 15 minutes.

    3. Mash the Mixture

Once the beans are tender, remove the rosemary branch and mash the mixture with a spoon or pass it through a food mill for a smoother texture. Stir in the extra-virgin olive oil and season with additional salt if needed. Thin it out with a bit more water if necessary.

    4. Serve

Serve the creamy fava bean spread immediately or let it come to room temperature. Perfect as a dip for vegetables or slathered on crusty bread.

    Pitfalls and tips

    Source Fresh Fava Beans

The freshest beans from a farmers' market can make all the difference in your spread.

    Use High-Quality Olive Oil

Choose a top-notch extra-virgin olive oil for its fruity and peppery notes.

    Balance Your Seasoning

Enhance the delicate flavor of fava beans with salt, pepper, and a touch of acid like lemon juice or vinegar.

    Build Layers of Flavor

Sauté aromatics like garlic or shallots in high-quality olive oil for a rich taste.

    Puree to Perfection

Achieve a creamy texture by pureeing the beans smoothly and adjusting thickness if needed.
