    How to Make Cumin Lamb Chops with Charred Scallions and Peanuts

    1. Prepare Spice Mixture

    Begin by combining the cumin seeds, Sichuan peppercorns, and red pepper flakes. Use a spice mill or a mortar and pestle to grind them into a coarse powder.

    2. Season Lamb Chops

    Add 1½ teaspoons of kosher salt to the spice mixture and mix well. Generously season the lamb chops with this cumin-salt blend.

    3. Sear Lamb Chops

    Heat a tablespoon of vegetable oil in a large skillet over high heat. Sear the lamb chops for about 3 to 4 minutes on each side.
