    How to Make Italian Sausage with Caramelized Peppers and Onions

    1. Prep the Sausages

    Using a skewer or paring knife tip, prick each sausage in several places. Place sausages in a single layer in a skillet, and add water to cover. Simmer for 5 minutes, then cover, turn off the heat, and let steep.

    2. Cook Peppers and Onions

    Heat a wide skillet over high heat and add 2 tablespoons olive oil. Once hot, add the peppers and onions. Season with salt and pepper. Cook, stirring frequently, until softened and starting to brown, about 10 minutes. Lower the heat if they're browning too fast. Include the minced garlic in the last minute of cooking. Stir to combine and cook for 1 additional minute. Finish by stirring in the red wine vinegar.

    3. Brown the Sausages

    In the same pan, add 1 tablespoon olive oil over medium heat. Add sausages and cook for 2 to 3 minutes per side until browned.

    4. Assemble and Garnish

    Place the pepper and onion mixture on a platter. Lay the browned sausages on top. Sprinkle with crushed red pepper, dried oregano, and garnish with fresh basil leaves.

    5. Optional Eggs

    If desired, fry eggs to your preference in the same skillet, seasoned with salt and pepper, to serve alongside.
