    How to Make Lemon and Thyme Grilled Chicken Breasts

    1. Pound Chicken Breasts

    Gently pound the chicken breasts to an even thickness of about half an inch using a kitchen mallet or rolling pin between sheets of parchment or plastic wrap.

    2. Prepare Marinade and Marinate Chicken

    In a bowl, combine kosher salt, freshly cracked black pepper, finely chopped thyme leaves, crushed garlic, the zest and juice of one lemon, and a generous drizzle of extra-virgin olive oil. Toss the chicken in the mixture and let it marinate for one to two hours.

    3. Prepare Grill and Cook Chicken

    Preheat your grill to medium-high. Brush each chicken breast lightly with olive oil and lay them onto the grill. Grill the chicken for about three to five minutes on each side, until a golden-brown crust forms and the chicken is cooked through with juices running clear.

    4. Garnish and Serve

    Transfer the cooked chicken to a serving platter, spritz with lemon juice, and scatter torn basil or mint leaves over the top. Serve immediately.
