1. Soak the Cedar Plank
Place the cedar grilling plank in a large baking dish and cover it with water. Weigh it down with cans or something heavy to keep it submerged. Soak for at least an hour.
2. Preheat the Grill
While the plank is soaking, preheat your grill for indirect cooking over medium-high heat.
3. Prepare the Salmon Fillet
Pat the salmon fillet dry with a tea towel. Season it generously with salt, pepper, and garlic powder.
4. Char the Cedar Plank
Place the soaked cedar plank over direct heat on the grill for 3 to 4 minutes until it starts to smoke and char a bit.
5. Cook the Salmon
Move the charred cedar plank to the indirect heat side of the grill. Lay the seasoned salmon fillet on the plank, skin side down. Close the grill lid and let the salmon cook for about 7 to 12 minutes until the fish is opaque and flakes easily with a fork.
6. Add the Pesto
Carefully remove the cedar plank from the grill and immediately spread the pesto over the top of the salmon. Let it rest for a few minutes to absorb all the flavors.
7. Serve
Serve the salmon with lemon wedges on the side if desired.
