    How to Make Summer Berry & Thyme Dressing

    1. Prepare Vinegar Mixture

    Whisk together the white wine vinegar, balsamic vinegar, chopped fresh thyme, Dijon mustard, granulated sugar, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of freshly ground black pepper in a small bowl.

    2. Add and Crush Raspberries

    Add the raspberries to the bowl. Using a wooden spoon or whisk, crush the raspberries into the vinegar mixture. This releases the berries' natural flavors and juices.

    3. Whisk in Olive Oil

    Gradually whisk in the extra-virgin olive oil. Pouring the oil in slowly while whisking continuously helps to create an emulsion, resulting in a creamy and well-blended dressing.

    4. Adjust Seasoning

    After mixing, taste the dressing. If it needs a touch more sweetness, add a bit more sugar. Adjust the seasoning with additional salt and pepper if necessary.

    5. Rest and Serve

    For the best flavor, let the dressing sit for up to 30 minutes to allow the berries to release more of their juices and the flavors to meld together. Give the dressing one final whisk before serving.
