How to Make Skillet Caramel-Apple Crisp

1. Create Caramel Sauce

In a 3-quart saucepan, dissolve 2 cups of granulated sugar with a splash of water over medium heat. Add 3/4 cup of diced unsalted butter and let the mixture bubble into a deep golden brown. Gradually whisk in 1 cup of heavy cream, a teaspoon of vanilla, and a generous pinch of kosher salt. Whisk until smooth and free of lumps.

2. Prep and Season Apples

Peel, core, and slice 3 pounds of tart apples. Toss with 1 tablespoon of fresh lemon juice, ground cinnamon, ground cardamom, ground cloves, and a pinch of salt. Drizzle with the caramel sauce and stir to coat.

3. Make Crisp Topping

In a separate bowl, mix 1 cup of all-purpose flour, 1 cup of old-fashioned oats, a handful of chopped pecans, and 1/3 cup of light brown sugar. Cut in 1/2 cup of softened unsalted butter until the mixture resembles breadcrumbs.

4. Assemble and Bake

Place spiced apples into a 9- or 10-inch skillet. Cover with the oat topping and bake in a preheated oven until golden and bubbling, about 40-50 minutes.
