1. Make the Dough
Start by combining the softened butter, light brown sugar, malted milk powder, salt, baking soda, and a pinch of nutmeg in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until the ingredients start to come together, then increase to medium speed. Continue mixing until the mixture is light and fluffy, which should take about 5 minutes.
2. Add Ingredients
Gradually add the flour, vanilla extract, and milk to the butter mixture. Use a flexible spatula to fold in the mini chocolate chips, ensuring there are no streaks of dry ingredients left in the dough.
3. Portion the Dough and Bake
Preheat your oven to 350°F (175°C). Using a cookie scoop, portion the dough onto a parchment-lined half sheet pan. Flatten each portion into a disc shape, and press a few extra mini chocolate chips onto the tops if desired. Bake the cookies for about 18 minutes, or until they are lightly golden and puffed. Allow the cookies to cool to room temperature on the baking sheet, then transfer them to an airtight container and freeze until firm.
4. Form the Sandwiches
Once your cookies are frozen, it's time to assemble the sandwiches. Take your prepared ice cream or gelato and scoop a generous portion onto the flat side of one cookie. Place another cookie on top and press gently to form a sandwich. Roll the edges of the ice cream in additional mini chocolate chips for extra flavor and texture.
5. Freeze Sandwiches
Place the assembled sandwiches in an airtight container, separating layers with plastic wrap if necessary. Freeze for at least 1 hour to allow the sandwiches to set.
Replace butter with peanut butter and use peanut butter chips.
Use cocoa powder in the dough and white or dark chocolate chips.
Experiment with flavors like mint chocolate chip, coffee, strawberry, or rocky road.
Use a chocolate cookie dough base.
Infuse milk with mint or use peppermint extract and add chocolate chips.
