1. Sauté Onions and Garlic
Melt 1 tablespoon of butter in a saucepan over medium heat. Add the onions and garlic and cook until they are just softened.
2. Add Apple and Celery
Stir in the diced apple and chopped celery, cooking until they are wilted.
3. Create Curry Base
Add the curry powder, crushed tomatoes, chicken broth, bay leaf, salt, and pepper to the saucepan. Bring to a boil, then simmer for about 15 minutes.
4. Blend the Sauce
Remove the bay leaf and puree the sauce until smooth, adding more chicken broth if necessary.
5. Cook the Chicken
Season the chicken breasts with salt and pepper. In a nonstick skillet, melt the remaining butter and sear the chicken until golden-brown, then cook through.
6. Combine and Simmer
Pour the curry sauce over the chicken in the skillet and simmer everything together for 5 minutes.
