How to Make Grilled Corn Salad with Fresh Cheese and Corn Nuts

    1. Grill the Corn

Preheat your grill, ensuring it's hot. Place the corn with husks directly on the grill. Cook for about 25 to 35 minutes, turning occasionally. The corn is done when the kernels are tender and have charred spots. Set aside to cool.

    2. Prepare the Dressing

In a large bowl, mix together the lime juice, red onion, and red pepper flakes. Season with kosher salt and freshly ground black pepper to taste.

    3. Combine Corn with Dressing

Once the corn has cooled, shuck it by removing the husks and silk. Strip the kernels from the cob and add them to the bowl with the lime and onion mixture, tossing to coat.

    4. Add Remaining Ingredients

Add the cilantro, crumbled cheese, and chopped corn nuts to the bowl. Toss everything together, adjust seasoning if necessary, and serve.
