1. Preheat Oven
Preheat your oven to 350°F (175°C). This ensures that the cookies will bake evenly right from the start.
2. Cream Butter and Sugars
In a large mixing bowl, cream together 227 grams (1 cup) of softened unsalted butter with 220 grams (1 cup) of brown sugar and 100 grams (0.5 cup) of granulated sugar. Beat the mixture until it’s light and fluffy.
3. Add Eggs and Vanilla
Add in 2 large eggs, one at a time, making sure each is fully mixed in before adding the next. Stir in 10 ml (2 teaspoons) of pure vanilla extract.
4. Combine Dry Ingredients
In another bowl, combine 180 grams (1.5 cups) of all-purpose flour with 5 grams (1 teaspoon) of baking soda and 2.5 grams (0.5 teaspoon) of salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
5. Add Oats, Chocolate Chips, and Pecans
Stir in 270 grams (3 cups) of old-fashioned rolled oats. Fold in 170 grams (1 cup) of semi-sweet chocolate chips and 125 grams (1 cup) of chopped pecans.
6. Shape Cookies
Using a cookie scoop or a tablespoon, drop rounded balls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
7. Bake Cookies
Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown.
8. Cool Cookies
Once baked, remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Substitute dark, milk, or white chocolate chips, or use a combination. Add cocoa powder to the dough for a double chocolate cookie. Mix in chocolate chunks or a chopped chocolate bar for varied texture.
Instead of semi-sweet chocolate chips, try dark chocolate chunks for a less sweet, more intense chocolate flavor. Alternatively, white chocolate chips can provide a creamy and sweet contrast to the rustic texture of the oatmeal.
Introduce warm spices such as ground cinnamon, nutmeg, or cardamom to add depth. For a more adventurous twist, a pinch of cayenne pepper can pair surprisingly well with chocolate, giving a subtle heat that comes through at the end.
Swap pecans for walnuts, almonds, or hazelnuts for a different flavor profile. For a nut-free version, use seeds like pumpkin or sunflower seeds.
Mix in dried cherries, cranberries, or apricots for a tart fruitiness that complements the richness of the chocolate and pecans. Chop the fruit finely if you prefer subtle hints of flavor or leave them chunkier for more pronounced bursts.
