1. Cream Butter and Sugars
Begin by beating the softened butter, granulated sugar, and confectioners' sugar together using a mixer on medium-high speed for about 3 to 6 minutes until the mixture is pale and fluffy.
2. Add Egg Yolks and Vanilla
Add the egg yolks and vanilla extract to the butter mixture, and beat for about 30 seconds until everything is well combined. Scrape down the bowl as needed.
3. Combine Dry Ingredients
In a separate medium bowl, whisk together the all-purpose flour and salt.
4. Mix Dry and Wet Ingredients
Add the dry mixture to the butter mixture. Mix on low speed for about 30 seconds, just until the dough comes together. Do not overmix.
5. Shape and Chill Dough
Divide the dough in half and roll each portion into a 6-inch-long cylinder, approximately 2 inches thick. Optionally, roll these logs in colored sugar, finely chopped nuts, or sprinkles. Wrap each dough log tightly in plastic wrap and chill in the refrigerator for at least 2 hours, or up to 2 days.
6. Preheat Oven
Preheat your oven to 350°F. Line your baking sheets with parchment paper.
7. Slice and Bake Cookies
Once the dough is firm, slice each log into ¼-inch-thick rounds. Rotate the log a quarter turn every few slices to maintain its shape. Place the dough rounds on the prepared baking sheets and bake for 12 to 15 minutes on the upper-middle and lower-middle racks, switching and rotating them halfway through baking. The cookies are done when the edges begin to brown.
8. Cool and Enjoy
