1. Warm Milk, Sugar, and Salt
Combine 3 cups of whole milk, ⅓ cup of sugar, and a pinch of kosher salt in a medium saucepan. Warm this mixture over medium heat, stirring occasionally, until it begins to simmer.
2. Melt Chocolate
Once the milk is simmering, remove the saucepan from the heat and add 1½ cups of bittersweet chocolate chips. Allow the chocolate to stand in the hot milk for about 2 minutes before stirring until completely melted and smooth.
3. Add Vanilla and Serve
Add ½ teaspoon of pure vanilla extract to the mixture and stir. Pour the hot chocolate into mugs and top each serving with whipped cream or marshmallows, and sprinkle with finely grated chocolate if desired.
