How to Make Chocolate Peanut Butter Cup Cookies

1. Preheat Oven and Prepare Filling

Preheat your oven to 375°F (190°C). In a medium bowl, mix together peanut butter, confectioners’ sugar, and flaky sea salt until smooth. Scoop into small portions on a tray and freeze.

2. Prepare Cookie Dough

Beat together softened butter, granulated sugar, dark-brown sugar, peanut butter, egg, and vanilla extract until light and fluffy. Sift in cocoa powder, baking powder, and kosher salt. Gently incorporate all-purpose flour to form a smooth dough.

3. Assemble and Bake Cookies

Flatten dough portions, place frozen peanut butter filling in the center, and seal edges. Roll in granulated sugar, place on a baking sheet, flatten slightly, and bake for 8-10 minutes at 375°F (190°C).
