1. Sear the Beef
In a large pan, heat 1-2 tablespoons of olive oil over medium-high heat. Add the beef pieces, searing them for a few minutes on each side until they are browned all over. Once browned, use a slotted spoon to transfer the beef to a plate and set aside.
2. Soften Onions
In the same pan, add a bit more olive oil if necessary. Cook the chopped onion until it softens.
3. Build Flavor Base
Add the finely chopped garlic, ground cumin, and chipotle paste to the onions. Sauté for 1 minute, allowing the flavors to meld.
4. Simmer the Sauce
Pour the reserved sauce from the kidney beans into the pan, along with the canned chopped tomatoes and a can of water (use the empty tomato can for measurement). Stir well to combine.
5. Tenderize Beef
Return the seared beef to the pan. Bring the mixture to a simmer, then reduce the heat to low, cover the pan, and let it cook for 2 hours, or until the beef is tender and the chili has thickened.
6. Finish with Beans and Zest
Stir in the sieved kidney beans and the zest of one lime into the chili. Season with salt and pepper to taste, and heat through.
