1. Beat Cream Cheese and Butter
In a medium bowl, beat the cream cheese and butter together until the mixture is smooth and lump-free.
2. Add Sweetener and Vanilla
Add the Swerve natural sweetener (or liquid stevia) and vanilla extract to the bowl and continue to beat until all the ingredients are well incorporated.
3. Mash Berries
In a small bowl, thoroughly mash the berries. Ensure they are well mashed to provide a consistent flavor.
4. Fold Berries into Cream Cheese Mixture
Gently fold the mashed berries into the cream cheese mixture using a rubber scraper to ensure even distribution.
5. Spoon Mixture into Molds
Spoon the mixture into fat bomb molds or small silicone cupcake molds placed in a muffin tin, or into cupcake papers if you prefer.
6. Freeze Cheesecake Bites
Place the molds in the freezer and let them set for at least 2 hours.
7. Store and Serve
Once frozen, transfer the cheesecake bites to a zip-top bag for storage. You can keep them in the freezer for up to 3 months.
