1. Make the Special Sauce
In a bowl, stir together the mayonnaise, minced shallot, finely chopped dill pickles, brine, ketchup, sugar, and pepper until well combined. This will be the special sauce that brings your burger to life.
2. Prepare the Buns
Spread a generous tablespoon of this sauce on each bun top, ensuring an even layer for maximum flavor in every bite.
3. Form Beef Balls
Take the 8 ounces of ground beef and divide it into four equal pieces, about 2 ounces each. Form these pieces into loose, rough balls. Remember, do not compress the meat; you want it to stay airy to form a nice crust when cooked.
4. Prepare the Skillet
Rub 1/4 teaspoon of vegetable oil into the bottom of a 12-inch cast-iron or carbon-steel skillet using a paper towel. Heat the skillet on medium-low for about 5 minutes to get it ready.
5. Smash and Cook the Patties
Increase the heat to high. Place two beef balls in the skillet, about 3 inches apart. Using your prepared saucepan, smash each ball down until it's about 4 to 4½ inches in diameter. Season each patty with 1/8 teaspoon of salt and a sprinkle of pepper. Cook until three-quarters of each patty is no longer pink on top, about 2 minutes. Using a thin metal spatula, carefully flip the patties and cook for another 15 seconds, then slide the skillet off the heat. Transfer one patty to each bun bottom and top with a slice of American cheese.
6. Repeat Cooking Process
Scrape any browned bits from the skillet and wipe it clean with a paper towel. Return the skillet to the heat and repeat the cooking process with the remaining two beef balls.
7. Assemble the Burgers
