How to Make Beale Street Cheeseburger

    1. Heat Oil

Heat 2 quarts of peanut oil in a Dutch oven to 320°F using a candy or fry thermometer to ensure proper temperature.

    2. Prepare Broiler

Preheat the broiler and position the oven rack for melting the cheese and toasting the buns.

    3. Make Patties and Cheese Mixture

Divide 12 ounces of ground beef into four 3-ounce portions. Combine 1¼ ounces of grated cheddar cheese with a teaspoon each of smoked paprika and garlic powder.

    4. Prepare Buns

Spread a generous layer of mayo and mustard on the inside of the hamburger buns.

    5. Fry Patties

Carefully place the beef patties into the hot oil and fry for about 1 minute until golden and crispy, then let them drain on paper towels.

    6. Assemble Burgers

Place the crispy patties onto the buns, top with the cheese mixture, and add 12 to 15 dill pickle slices. Broil to melt the cheese if needed.

    7. Serve

Serve the Beale Street Cheeseburgers immediately or wrap in aluminum foil to keep warm if holding for a short while.
