How to Make Garlicky Sesame-Cured Broccoli Salad

1. Cure the Broccoli

In a large bowl, mix red wine vinegar and kosher salt. This will start the curing process for the broccoli.

2. Prepare the Spiced Oil

Heat extra-virgin olive oil in a large skillet over medium heat. Add minced garlic cloves and cumin seeds. Cook for about one minute until aromatic. Then add roasted sesame oil and a large pinch of crushed red pepper flakes to the skillet, stirring to combine.

3. Marinate the Broccoli

Pour the prepared spiced oil over the broccoli florets in the bowl. Toss to ensure the broccoli is well coated. Let it marinate for at least 1 hour at room temperature or chill for up to 48 hours for a more intense flavor.
