    How to Make Go-To Pancakes

    1. Prepare the Dry Ingredients

    In a large bowl, whisk together 2 cups of unbleached all-purpose flour, 2 tablespoons of sugar, 1 tablespoon of baking powder, and ½ teaspoon of salt. Make sure everything is well mixed to ensure even distribution.

    2. Create the Frothy Wet Mixture

    In a medium bowl, combine 2¼ cups of unsweetened nondairy milk with 1 teaspoon of apple cider vinegar. Whisk these until the mixture becomes frothy.

    3. Combine Wet and Dry Mixtures

    Pour the frothy nondairy milk mixture into the bowl with the dry ingredients. Add 3 tablespoons of melted coconut oil and 1 teaspoon of vanilla extract to the mix. Stir until you achieve a smooth batter.

    4. Preheat and Oil the Griddle

    Preheat your griddle to medium-high heat, and lightly oil it with coconut oil. Wait for the griddle to be fully heated before moving on to the next step.

    5. Cook the Pancakes

    Using a ladle or a ¼ cup measuring cup, pour batter onto the preheated griddle. Cook each pancake until bubbles form on top and the bottom turns golden, then flip and cook the other side.
