    How to Make Colorful Bell Pepper and Bacon Frittata with Goat Cheese

    1. Prep and Mix Eggs

    Preheat the oven to 375 degrees F (190 degrees C). In a medium bowl, whisk together eggs, milk, 1 teaspoon salt, and 1/2 teaspoon black pepper until smooth. Set aside.

    2. Cook Bacon

    Place a large oven-safe skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

    3. Sauté Vegetables

    In the same skillet with the bacon fat, add the diced onion and bell peppers. Sauté until the vegetables are soft and the onions are translucent. Add the baby spinach and cook until just wilted.

    4. Combine and Cook Frittata

    Return the cooked bacon to the skillet with the vegetables. Pour the egg mixture over the vegetables and bacon. Crumble the goat cheese on top. Cook over medium heat until the edges begin to set, about 2-3 minutes.

    5. Bake Frittata

    Transfer the skillet to the preheated oven. Bake until the frittata is set and the top is lightly golden, about 15-20 minutes. Let it cool slightly before serving.
