    How to Make Cheesy Fried Egg Quesadilla

    1. Prep Ingredients

    If using, chop the fresh cilantro and set aside. Shred the cheddar cheese and have it ready for use.

    2. Cook Eggs

    Heat a non-stick skillet over medium heat. Add half the butter and let it melt. Crack two eggs into the skillet, season with salt and pepper, and fry to your desired doneness. Repeat with remaining eggs and set them aside on a plate.

    3. Assemble Quesadilla

    Lay a tortilla flat on a clean surface. Sprinkle half the cheese over one half of the tortilla, then place two fried eggs on top of the cheese. Fold the tortilla in half to cover the eggs and cheese.

    4. Fry Quesadilla

    In the same skillet, add a little more butter if needed, and place the folded tortilla. Cook until golden brown on one side, then flip carefully to brown the other side and ensure the cheese is melted.

    5. Repeat and Serve

    Remove the quesadilla from the skillet, and repeat the process with the remaining ingredients. Cut each quesadilla into wedges and, if desired, serve with a sprinkle of chopped cilantro and salsa on the side.
