    How to Make Blueberry-Ginger Clafoutis

    1. Preheat Oven and Prepare Baking Dish

    Preheat the oven to 350 degrees Fahrenheit and grease a 9-inch baking dish with unsalted butter.

    2. Make Batter

    In a large bowl, whisk together whole milk, large eggs, and granulated sugar until smooth. Gently stir in all-purpose flour, lemon zest, ground green cardamom, and fine sea salt.

    3. Pre-bake Batter

    Pour the batter into the greased baking dish and bake on the top rack for 15 to 17 minutes, until the center is slightly jiggly.

    4. Add Blueberries and Ginger

    Scatter blueberries and chopped crystallized ginger over the partially baked batter, then sprinkle 2 tablespoons of granulated sugar over the fruit.

    5. Finish Baking

    Return the dish to the oven and bake on the middle rack for 60 to 65 minutes until golden brown and just set.

    6. Serve

    Let the clafoutis rest for 5 minutes before serving. Optional: Dust with confectioners' sugar before serving.
