1. Preheat Oven
Preheat your oven to 300°F, placing the rack in the second-lowest position.
2. Season Chuck Roast
Season your chuck roast generously with salt and black pepper on all sides.
3. Brown the Roast
In a Dutch oven over medium heat, melt the bacon fat. Once the fat is hot and shimmering, carefully add the seasoned roast. Brown the roast on all sides to seal in the flavors and develop a rich, flavorful crust.
4. Add Ingredients and Simmer
After the roast is well-browned, stir in the diced tomatoes, water, liquid smoke (if using), minced garlic, ground cumin, and chipotle powder. Bring the mixture to a gentle simmer.
