1. Prepare the Sauce
Whisk together the oyster sauce, chicken broth, dry sherry, light brown sugar, toasted sesame oil, and cornstarch until smooth and well-blended.
2. Marinate the Beef
Combine the sliced flank steak with the soy sauce in a bowl and let it marinate while you prepare the other ingredients.
3. Cook the Beef
Preheat a 12-inch nonstick skillet with a lid over high heat. Once the skillet is hot, add 1.5 tablespoons of peanut oil. Add half of the beef in a single layer and cook for about 1 minute without stirring, then continue to cook until the beef is browned and cooked through. Remove the first batch and repeat the process with the remaining beef and oil.
4. Cook the Broccoli
Add the remaining oil to the skillet, followed by the broccoli. Stir to coat the broccoli evenly with oil. Pour in the water, cover the skillet, and steam the broccoli for about 2 minutes.
5. Add the Bell Pepper
Uncover the skillet and add the red bell pepper. Cook for about 2 minutes until the bell pepper softens slightly.
6. Add the Sauce
Push the vegetables to one side of the skillet and add the sauce mixture. Let the sauce simmer until it starts to thicken.
7. Combine All Ingredients
Return the beef and any accumulated juices to the skillet, along with the sliced scallions. Stir everything together and cook for about 30 seconds, just until the beef is heated through.
8. Serve
Transfer the stir-fry to a serving platter and enjoy your savory sesame-glazed beef with crisp broccoli.
