    How to Make Beef Skewers with Lime Herb Sauce

    1. Soak Bamboo Skewers

    Soak 8 bamboo skewers in water for about 30 minutes. This prevents them from burning on the grill.

    2. Prepare Marinade

    In a small bowl, combine 60 ml fresh lime juice, 2 tablespoons vegetable oil, 1 tablespoon low-sodium soy sauce, minced fresh ginger, minced shallot, minced serrano chile, and 1 teaspoon sugar. Add 2 tablespoons of water to the mixture and stir well to combine.

    3. Marinate Steak

    Cut the skirt steak crosswise into 3-inch segments, then halve each segment lengthwise. Place the steak pieces in a medium bowl and add 2 tablespoons of the lime-soy mixture and 1 tablespoon of vegetable oil. Toss the steak pieces to coat them evenly. Let the steak marinate for 10 to 15 minutes.

    4. Prepare Zesty Herb Drizzle

    Mix the minced cilantro and mint into the remaining lime sauce.

    5. Preheat Grill

    Preheat your grill for direct-heat grilling over high heat.

    6. Thread Steak onto Skewers

    Thread 2 pieces of the marinated steak onto each of the soaked skewers. Sprinkle the skewered steak with coarse kosher salt and freshly ground pepper.

    7. Grill Skewers

    Place the skewers on the grill and cook for about 3 minutes per side for rare, or until they reach your desired level of doneness.

    8. Serve Skewers

    Arrange the grilled skewers on a plate with a side of cooked brown jasmine or basmati rice. Drizzle the skewers with the zesty herb sauce and garnish with thinly sliced green onions and lime wedges, if desired.
