How to Make Classic Hawaiian Loco Moco with Savory Gravy

1. Patty Prep

In a large bowl, combine the beef, chopped onion, grated garlic, 1.5 teaspoons of Worcestershire sauce, 1 teaspoon salt, and 0.5 teaspoon pepper. Mix until just combined. Form into four 0.5-inch thick patties. Chill in the refrigerator for 20 minutes on a covered plate.

2. Caramelized Onions

Heat 1 tablespoon oil in a skillet over medium heat. Add the sliced onions and cook until nearly translucent, about 5-7 minutes. Reduce heat to low and caramelize for another 10 minutes, stirring frequently. Set aside in a bowl.

3. Beef Patties

Using the same skillet, add 1 tablespoon oil and heat over medium. Cook the patties for 4 minutes per side or until browned. Place them on a clean plate to rest.

4. Mushroom Sauté (Optional)

If using mushrooms, add the remaining 0.5 tablespoon oil to the skillet. Sauté the mushrooms until tender, seasoning with salt and pepper, about 10 minutes.

5. Gravy Creation

To the mushrooms, add caramelized onions, beef broth, soy sauce, and the remaining 1.5 teaspoons Worcestershire sauce. Simmer over medium-low heat.

6. Gravy Thickening

In a small bowl, whisk the cornstarch with 2 tablespoons of the broth to create a slurry. Stir into the skillet and simmer until thickened, 5-7 minutes.

7. Assembly

On each plate, place 1 cup of rice. Top with a beef patty, gravy, a fried egg, and garnish with chopped scallions.
