    How to Make Garlic-Infused Creamy White Beans

    1. Caramelize the Garlic

    In a medium saucepan, melt the tablespoon of unsalted butter over medium heat. Once the butter is melted and starting to foam, place the halved head of garlic cut side down into the pan. Cook the garlic for 1-2 minutes, until it turns a beautiful golden brown. This step caramelizes the garlic, adding a deep, rich flavor to the dish.

    2. Simmer the Beans

    Next, pour in the cup of whole milk, followed by the can of chickpeas with their liquid, and the drained and rinsed white beans. Add the thyme sprig and sprinkle in the ground nutmeg. Season the mixture with kosher salt and black pepper to taste. Allow this mixture to come to a gentle simmer, stirring occasionally, for about 15 minutes. The simmering allows all the flavors to meld together, creating a creamy and aromatic base.

    3. Prepare the Garlic Toast

    After the mixture has simmered and the flavors have developed, use a fork to carefully remove the garlic halves from the saucepan. The garlic should be soft and aromatic. Spread the softened garlic cloves onto the slices of crusty bread, distributing it evenly. If you prefer a thicker, stew-like consistency, you can mash some of the beans directly in the pan using a potato masher or the back of a spoon.

    4. Serve the Dish

    Finally, ladle the creamy beans and milk into serving bowls. Drizzle a bit of extra-virgin olive oil over the top, then generously sprinkle with freshly grated Parmesan.
