1. Blanch Fava Beans
Shell and blanch the fava beans in boiling water for one minute, then transfer them to an ice water bath to stop the cooking process and remove the tough outer skin.
2. Sauté Spring Onions
In a saucepan, heat 1 tablespoon of olive oil over medium heat, then add chopped spring onions and sauté for about four minutes until soft and translucent.
3. Cook Fava Beans and Green Garlic
To the sautéed onions, add the peeled fava beans and sliced green garlic along with a pinch of salt. Cook for another four minutes to let the flavors meld.
4. Simmer Ragout
Add a splash of water to the saucepan and let it simmer for four minutes to soften the beans and combine the flavors.
5. Finish with Herbs and Seasoning
Stir in 2 tablespoons of extra-virgin olive oil and 2 teaspoons of chopped parsley. Mix until the sauce looks shiny and emulsified, then taste and season with salt as needed.
