How to Make Classic Buttermilk Drop Biscuits

    1. Preheat Oven

Preheat your oven to 475°F, making sure to adjust the oven rack to the middle position.

    2. Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.

    3. Combine Buttermilk and Butter

In a medium bowl, stir together the cold buttermilk and the 8 tablespoons of melted butter. The cold buttermilk will cause the melted butter to form small clumps.

    4. Mix Dough

Pour the buttermilk mixture into the bowl of dry ingredients. Stir with a rubber spatula until the dough just comes together and starts to pull away from the sides of the bowl.

    5. Shape Biscuits

Using a greased 1/4-cup dry measure, scoop and drop portions of the batter onto a parchment-lined rimmed baking sheet, spacing them about 1.5 inches apart.

    6. Bake Biscuits

Bake for 12 to 14 minutes, until the tops of the biscuits are golden brown and crisp.

    7. Brush with Butter

Once out of the oven, immediately brush the tops with the remaining 2 tablespoons of melted butter.

    8. Cool and Serve

Transfer the biscuits to a wire rack and let them cool for about 5 minutes before serving.

    Variations

    Cheese Biscuits

Add grated cheese such as cheddar, Parmesan, or Gruyère into the biscuit dough. You can also add a pinch of cayenne pepper or garlic powder for enhanced flavor.

    Cheese and Chive Biscuits

Add 1 cup of grated sharp cheddar cheese and 2 tablespoons of finely chopped fresh chives to the dry ingredients. This will give you a savory biscuit that's perfect for breakfast sandwiches or as an accompaniment to soup.

    Bacon and Scallion Biscuits

Add cooked, crumbled bacon and finely chopped scallions into the dough for a savory twist that's perfect for breakfast or brunch.

    Loaded Biscuits

Combine any of the above variations to create a loaded biscuit, such as a Cheddar-Herb-Bacon biscuit or a Spiced Cheese biscuit.

    Garlic-Parmesan Biscuits

Stir in 1/2 cup of grated Parmesan cheese and 1 teaspoon of garlic powder to the dry mix for a biscuit with an Italian flair. Brush the tops with garlic butter before baking for an extra punch of flavor.
