1. Prepare Crust
In a medium bowl, mix together graham cracker crumbs, almond flour, brown sugar, salt, and ground cinnamon. Pour in melted butter and stir until the mixture resembles wet sand. Press this mixture firmly into the prepared pan to form an even layer. Bake for 8 minutes, then set aside to cool slightly.
2. Make Lime Filling
Whisk together sweetened condensed milk, egg yolks, lime zest, and fresh lime juice in a medium bowl. Pour this filling over the pre-baked crust and return the pan to the oven for 20 to 25 minutes until the center is slightly jiggly. Allow to cool.
3. Create White Chocolate Ganache
Place chopped white chocolate in a small bowl. Bring heavy cream to a gentle simmer in a small saucepan. Pour the hot cream over the chocolate, let it sit for a moment, and then whisk until smooth. Stir in butter and black lime powder until fully incorporated.
4. Assemble and Chill
Once the bars have cooled, pour the ganache over the lime filling. Spread evenly and refrigerate the bars for at least 1 hour to let the ganache set. Before serving, slice the bars into 16 pieces.
