1. Roast the Bacon
Preheat your oven to 400 degrees F. Place the thick-cut applewood-smoked bacon on a baking rack set over a sheet pan and roast for 15 to 20 minutes until browned and crispy.
2. Prepare the Dressing
Whisk together mayonnaise, ketchup, sweet relish, kosher salt, and freshly ground black pepper in a medium bowl and set aside.
3. Prepare the Avocados
Slice the ripe Hass avocados and toss them with lemon juice.
4. Toast the Bread
Arrange the slices of good bakery white bread on a sheet pan and toast in the oven for about 10 minutes until lightly toasted.
5. Assemble the Sandwiches
Spread the dressing on one side of each slice of toasted bread. On four of the slices, layer a leaf of lettuce, several slices of avocado, a slice of tomato, salt, pepper, bacon, and lobster meat. Top with another slice of bread, dressing side down.
