How to Make Crispy Fried Rice with Bacon and Cabbage

1. Fry the Bacon

Heat two tablespoons of grape seed oil in the skillet over medium heat. Add bacon pieces and fry for about two minutes, until golden and crisp. Remove bacon and set aside.

2. Cook the Cabbage and Scallions

In the bacon fat, cook sliced scallion whites until softened. Add the shredded cabbage with a pinch of salt and cook for 5 to 8 minutes, until wilted and caramelized. Stir in minced garlic and cook until fragrant, about a minute.

3. Crisp the Rice

Drizzle in remaining three tablespoons of grape seed oil. Add cooked rice, sprinkle with a pinch of salt, and fry for 1 to 4 minutes, until the rice is golden and crispy.

4. Finish the Dish

Drizzle fish sauce and soy sauce over the rice, stirring to coat. Return bacon to the pan, add kimchi and green peas, and mix until heated through. Optionally, top with a fried egg and a drizzle of toasted sesame oil before serving.
