1. Roast the Bacon
Preheat your oven to 350°F. Place the bacon on a half sheet pan and roast it in the oven for about 20 minutes, flipping once halfway through.
2. Prepare Brussels Sprouts and Apples
While the bacon is cooking, trim the ends of the Brussels sprouts and split them in half. As soon as the bacon is done, remove it from the pan and let it cool. Toss the Brussels sprouts and chopped apple in the residual bacon fat on the same sheet pan, placing the sprouts cut-side down. Return the pan to the oven and roast for 20 to 25 minutes, until the sprouts are browned and tender.
3. Create the Glaze
Crumble the cooled bacon into small pieces. In a separate bowl, whisk together the Dijon mustard and maple syrup until smooth.
4. Toss and Serve
Once the sprouts and apples are done, remove them from the oven and transfer to a large bowl. Add the crumbled bacon and drizzle the maple mustard mixture over the top. Toss everything together until the sprouts and apples are evenly coated, and the bacon is well distributed. Serve immediately.
