How to Make Stir-Fried Green Beans with Pork and Chiles

    1. Fry Pork

Heat the neutral oil in a 12-inch skillet or wok over medium-high heat. Add the ground pork and season with three-quarters of a teaspoon of salt. Fry until brown and crispy, about 6 to 9 minutes. Remove the pork and set aside, leaving the oil in the skillet.

    2. Stir-Fry Green Beans

If needed, add more oil to the skillet. Add the green beans and stir-fry until tender but still crisp, about 1 to 3 minutes.

    3. Add Aromatics

Stir in the red chiles, ginger, garlic, and coriander seeds. Season with a quarter teaspoon of salt and stir-fry for about 1 minute until aromatic.

    4. Combine Pork and Vegetables

Return the pork to the skillet with the green beans. Add the cilantro, rice-wine vinegar, soy sauce, and sugar. Stir well to combine and cook for another minute.

    Pitfalls and tips

    Staggered Cooking

Add ingredients that take longer to cook first. Meat and other aromatics should be added later to avoid overcooking.
