How to Make Soba Salad

1. Boil Soba Noodles and Carrot

Bring a large pot of water to a rolling boil. Add a pinch of salt, then the soba noodles and finely chopped carrot. Cook for 2 to 4 minutes until the noodles are softened but still firm.

2. Add Edamame

Introduce the edamame to the pot and cook for an additional 15 to 30 seconds. Then drain the noodles, carrot, and edamame in a colander.

3. Prepare Dressing

In a large salad bowl, whisk together soy sauce, lime juice, white miso, and mirin or sugar until well combined.

4. Assemble Salad

Place fresh trimmed spinach in the bowl, add the drained soba noodles, carrot, and edamame. Top with chopped scallion. Pour the dressing over the salad and toss to coat everything evenly.

5. Garnish with Ginger

Finish the salad by garnishing with freshly grated ginger. Serve immediately or chill before serving.
