    How to Make Crispy Shallot and Tender Greens Fusion Salad

    1. Prepare the greens

    Bring a large pot of water to a rapid boil. Add the 1 pound of prepared tender greens and cook them until they are tender, no more than 5 minutes. Drain the cooked greens in a colander and press them gently to remove excess water. Cut them into 1.5-inch lengths and place in a wide shallow bowl.

    2. Combine initial ingredients

    Add the 2 tablespoons of thinly sliced shallots, along with 2 tablespoons of Fried Garlic or a mix of Fried Garlic and Fried Shallots to the bowl with the greens. Toss lightly to combine.

    3. Add dry ingredients

    Sprinkle in 2 to 3 tablespoons of Dried Shrimp Powder, 2 tablespoons of chopped roasted peanuts, and 1 to 2 tablespoons of toasted chickpea flour. Toss the mixture again to distribute these components evenly.

    4. Add liquid ingredients and mix

    Drizzle 1 tablespoon of shallot oil and 2 tablespoons of fresh lime juice over the salad. Using your hands, mix everything thoroughly to ensure the greens are well-coated with the dressing.

    5. Add fish sauce and serve

    Add 1 tablespoon of fish sauce and mix well to taste. Mound the salad onto a serving plate and top with about 2 tablespoons of Fried Shallots for an extra crispy finish.
