How to Make Sardine Crostini with Seared Tomatoes

1. Sear Cherry Tomatoes

Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the halved cherry tomatoes, allowing them to sear for 2 to 3 minutes until slightly blistered and softened.

2. Season Tomatoes

Season the seared tomatoes with sherry vinegar, kosher salt, and freshly ground black pepper. Gently shake the skillet to coat the tomatoes evenly, then remove from the heat. Adjust the seasoning with more vinegar if needed.

3. Prepare Crostini

Toast the slices of crusty bread either in a toaster or under a broiler until golden and crispy. Rub each slice with the halved garlic clove to infuse with a subtle garlic flavor.

4. Assemble Crostini
