1. Roast the Peppers
Preheat your oven to 400 degrees. Toss the shishito peppers with olive oil, kosher salt, and freshly ground black pepper. Spread them out evenly on a sheet pan. Roast the peppers for 10 to 12 minutes until they become tender and retain their bright green color.
2. Make the Hollandaise Sauce
In a medium-sized, microwave-safe bowl, whisk together egg yolks, freshly squeezed lemon juice, cayenne pepper, and kosher salt. Slowly pour the melted butter into the mixture while whisking continuously to emulsify. Microwave the sauce for 15 seconds, whisk, and then continue heating in 10-second increments, whisking each time, until the hollandaise thickens and becomes smooth.
