1. Create the Marinade

Create a vibrant marinade by mixing the grated zest of half a lemon, the juice of one lemon, and five tablespoons of extra virgin olive oil in a wide, shallow bowl. Season this mixture generously with salt and pepper.

2. Prepare the Mushrooms

Wipe the button mushrooms clean with a damp cloth, trim the stems if needed, and give them a quick rinse if they appear particularly dirty. Slice the mushrooms in halves or quarters, depending on their size and your preference.

3. Cook the Mushrooms
