How to Make Corny Shrimp Fritters

1. Prepare Dry Ingredients

In a mixing bowl, whisk together cornmeal, all-purpose flour, sugar, kosher salt, and baking powder until well combined and free of lumps.

2. Heat Oil for Frying

Fill a large pot with canola oil for frying and warm it up to 375°F, monitoring the temperature with a deep-fat thermometer.

3. Season Shrimp

Season the halved large shrimp in a bowl with kosher salt, chili powder, and a pinch of cayenne.

4. Fry the Fritters

Dip each piece of seasoned shrimp into the prepared batter, then carefully place them into the hot oil. Fry for about 1 to 2 minutes per batch until golden brown, working in small batches to avoid overcrowding.

5. Drain and Serve

Remove the fritters with a slotted spoon and let them drain on paper towels. Serve warm.
