1. Tomato Preparation
Place the chopped tomatoes in a colander over a bowl or sink. Sprinkle with kosher salt and stir gently. Allow to drain for up to 2 hours to remove excess liquid.
2. Garlic Oil Infusion
In a small saucepan, combine olive oil and minced garlic. Warm over low heat for about 5 minutes or until garlic is softened and aromatic, taking care not to brown the garlic. Remove from heat and let cool.
3. Basil Prep
