How to Make Charred Scallion Dip

    1. Sear the Scallions

Heat a tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add a bunch of scallions that have been trimmed and halved, and sprinkle them with a pinch of sea salt. Let them sear for about 5 to 7 minutes, until they have a deep, even char across their surface.

    2. Cool and Chop Scallions

After the scallions are perfectly charred, remove them from the heat and let them cool. Once cooled, chop the scallions finely on a cutting board.

    3. Combine Ingredients

In a bowl, combine the chopped scallions with half a cup of sour cream, a tablespoon of mayonnaise, and a teaspoon of soy sauce. Stir everything together thoroughly until the dip is well-mixed. Taste and adjust seasoning as needed.
