How to Make Caramelized Carrots with Pancetta, Olives, and Crispy Parmesan

    1. Prepare Carrots

Start by peeling and slicing the fresh carrots using a peeler and a sharp knife on a cutting board. The slices should be of uniform thickness to ensure even cooking. Once your carrots are ready, set them aside.

    2. Cook Pancetta

Take a pan and place it over medium heat. Add the pancetta and sauté it until it turns golden and crispy. Remove the pancetta from the pan and set it aside for later.

    3. Caramelize Carrots

Toss the sliced carrots into the same pan, allowing them to absorb the savory pancetta flavors. Cook the carrots until they achieve a lovely, golden-brown glaze.

    4. Add Olives

Once the carrots are caramelized, add a handful of olives to the pan. Stir them in briefly, just enough to warm them through.

    5. Crisp Parmesan

Grate the Parmesan cheese and spread it evenly on a baking sheet. Place it in a preheated oven and bake until the Parmesan is golden and crispy.

    6. Assemble and Serve

Combine the caramelized carrots, pancetta, and olives in a serving dish. Sprinkle the crispy Parmesan over the top before serving.
