    How to Make Anchovies with Fried Bread

    1. Preheat Oven and Prepare Bread Cubes

    Preheat your oven to 350°F. Cut four ½-inch-thick slices of filone or any other crusty bread into ½-inch cubes and toss with 2 tablespoons of extra virgin olive oil until evenly coated.

    2. Toast Bread Cubes

    Spread the coated bread cubes on a baking sheet and toast in the preheated oven for about 12 minutes, until they turn a dark golden brown.

    3. Combine Anchovies, Bread, and Scallions

    In a medium bowl, combine 4 ounces of drained marinated white anchovies with the toasted bread cubes and 4 thinly sliced scallions.

    4. Dress the Mixture

    Whisk together the reserved anchovy liquid with some extra virgin olive oil and pour over the anchovy, bread, and scallion mixture, mixing gently until well coated.

    5. Rest and Serve

    Allow the mixture to stand at room temperature for about 2 hours to let the flavors meld. If made in advance, the anchovies can be refrigerated for up to 3 days, but should be brought to room temperature before serving.
